• Olive all’ascolana, large and tasty stuffed olives, a symbol of the Marche cuisine.
• Vincisgrassi, a kind of lasagna where thin sheets of pasta are served with a ragout of mixed meat, guts and various aromas, along with white sauce and parmesan cheese. For some the term “vincisgrassi” comes from the the name of the Austrian general Windschar Graetz who in 1799 besieged Ancona, attributing the authorship to his personal chef.
• Spaghetti mari e monti, based on squids and mushrooms which combine the flavors and aromas of the mountains and the sea.
• Brodetto di mare, which every city of the Marche customizes by adding some food that helps to make it unique.
• Maccheroncini e Tagliatelle di Campofilone
